Ingredients

  • 2 tablespoons Unsalted Butter

Instructions

  1. Prep the egg whites by allowing them to reach room temperature. Sprinkle cream of tartar in and whisk until soft peaks begin to form.
  2. Gradually incorporate granulated sugar while whisking until glossy peaks rise and hold their shape beautifully.
  3. Sift the almond flour and powdered sugar in another bowl, creating a light and airy mixture.
  4. Gently fold the meringue into your dry ingredients until everything coalesces into a soft, pliable batter.
  5. Introduce your gel food coloring until you get the stunning hue mixed in without overworking the batter.
  6. Line your baking sheets with silicone mats or parchment paper and pipe uniform rounds using a piping bag.
  7. Allow the piped shells to rest for 30-60 minutes until a skin forms.
