Ingredients

  • 1 tablespoon Butter
  • 4 ounces Cream Cheese
  • 1/4 cup Heavy Whipping Cream
  • 1 cup Shredded Cheddar Cheese
  • 1 pound Ground Beef
  • 2 tablespoons Taco Seasoning
  • 1/2 cup Sour Cream
  • Shredded Lettuce
  • 1 medium Chopped Tomato
  • Cilantro
  • JalapeƱo
  • 1 tablespoon Olive Oil
  • 4 Low-Carb Tortillas

Instructions

  1. Melt butter in a skillet over medium heat until bubbling.
  2. Add cream cheese, stirring until combined and glossy.
  3. Pour in heavy whipping cream, whisking for a smooth consistency.
  4. Stir in half of the shredded cheese until melted, then set aside.
  5. Add olive oil to the skillet, followed by ground beef, breaking it apart and cooking until browned.
  6. Mix in taco seasoning and simmer for about 3-4 minutes.
  7. Lay out tortillas on a clean surface and spread beef mixture in the center.
  8. Drizzle with cheese sauce and top with lettuce, tomatoes, and other toppings.
  9. Fold the edges of the tortilla to wrap snugly around the filling.
  10. Return to skillet, seam side down, and toast for about 3-4 minutes on each side until golden.
