Description

A hearty chili with smoky bacon, rich turkey, and a hint of maple syrup, perfect for warming up on chilly evenings.


Ingredients

  • 1 lb smoked bacon (diced & divided)
  • 1 1/2 lbs ground turkey
  • Salt and pepper (for seasoning)
  • 2 tbsp butter
  • 1 large sweet onion (diced)
  • 1 1/2 cup fresh corn (about 2 corn cobs)
  • 6 garlic cloves (finely minced)
  • 2 large canned, fire-roasted bell peppers (diced)
  • 2 tsp sea salt
  • 1 tsp each: ground black pepper, ground cumin
  • 1 1/2 tsp each: ground coriander, chipotle chili, smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 28 oz canned, whole tomatoes (crushed)
  • 28 oz canned beans (drained) (cannellini, black or kidney)
  • 3 cups chicken broth
  • 1/4 to 1/2 cup 100% pure maple syrup (adjust amount to taste)
  • 3 tbsp fresh chopped cilantro
  • 2 green onions (chopped)
  • 1 to 2 lemons (adjust to taste)

Instructions

  1. Cook the bacon: In a large pot, over medium heat, add half the diced bacon. Sizzle until crispy.
  2. Remove the bacon: Using a slotted spoon, transfer the crispy bacon to a bowl, leaving the drippings in the pot.
  3. Brown the turkey: In the same pot, add the ground turkey. Season lightly with salt and pepper. Allow to brown.
  4. Sauté the aromatics: Introduce the butter, diced onion, garlic, and corn. Cook until the onion is translucent.
  5. Add spices and tomatoes: Stir in the fire-roasted bell peppers, spices, tomatoes, and chicken broth. Bring to a gentle simmer.
  6. Simmer: Reduce heat and allow to simmer for about 30-45 minutes, stirring occasionally.
  7. Incorporate the beans: As the chili thickens, add your choice of beans. Mix well, then add maple syrup gradually.
  8. Crisp bacon finish: Toss the remaining bacon into the chili for the last 10 minutes of cooking.
  9. Garnish and enjoy: Sprinkle fresh cilantro and green onions over the top before serving.

Notes

This chili improves significantly when made in advance. Store in an airtight container for up to three days.
