Ingredients
Scale
- 1 lb smoked bacon (diced & divided)
- 1 1/2 lbs ground turkey
- Salt and pepper, to taste
- 2 tbsp butter
- 1 large sweet onion (diced)
- 1 1/2 cups fresh corn (about 2 corn cobs)
- 6 garlic cloves (finely minced)
- 2 large canned, fire-roasted bell peppers (diced)
- 2 tsp sea salt
- 1 tsp ground black pepper
- 1 tsp ground cumin
- 1 1/2 tsp ground coriander
- 1 1/2 tsp chipotle chili
- 1 1/2 tsp smoked paprika
- 1 1/2 tsp dried oregano
- 1 1/2 tsp dried basil
- 28 oz canned, whole tomatoes (crushed)
- 28 oz canned beans (drained)
- 3 cups chicken broth
- 1/4 to 1/2 cup 100% pure maple syrup (adjust to taste)
- 3 tbsp 100% pure maple syrup (for drizzling)
- 1/4 cup fresh chopped cilantro
- 2 green onions (chopped)
- 1 to 2 lemons (adjust to taste)
Instructions
- Begin by placing a large, heavy-bottomed pot over medium heat. Add half of your diced smoked bacon and cook until crispy.
- Remove the bacon with a slotted spoon, and let drain on paper towels. Leave about 2 tbsp bacon drippings in the pot.
- Add butter to the pot and melt it. Toss in the diced onion and cook until translucent, about 3-5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add ground turkey, seasoning with salt and pepper. Cook until browned and no longer pink, breaking it into crumbles.
- Mix in fresh corn and diced fire-roasted bell peppers until combined.
- Sprinkle spices into the mixture and stir to coat.
- Pour in crushed tomatoes and chicken broth, scraping any bits stuck to the pot.
- Allow your chili to simmer on low heat for at least 30 minutes.
- Sauté the remaining bacon in a separate skillet until crisp and drizzle with 1 tbsp maple syrup for caramelizing.
- Fold in maple syrup to the chili before serving, adjusting sweetness as desired.
- Serve in bowls, garnishing with cilantro, green onions, lemon juice, and maple bacon bits.
