Description

A comforting chili with smoky bacon, ground turkey, and a hint of maple sweetness that warms the soul.


Ingredients

  • 1 lb smoked bacon (diced & divided)
  • 1 1/2 lbs ground turkey
  • Salt and pepper, to taste
  • 2 tbsp butter
  • 1 large sweet onion (diced)
  • 1 1/2 cups fresh corn (about 2 corn cobs)
  • 6 garlic cloves (finely minced)
  • 2 large canned, fire-roasted bell peppers (diced)
  • 2 tsp sea salt
  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1 1/2 tsp ground coriander
  • 1 1/2 tsp chipotle chili
  • 1 1/2 tsp smoked paprika
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp dried basil
  • 28 oz canned, whole tomatoes (crushed)
  • 28 oz canned beans (drained)
  • 3 cups chicken broth
  • 1/4 to 1/2 cup 100% pure maple syrup (adjust to taste)
  • 3 tbsp 100% pure maple syrup (for drizzling)
  • 1/4 cup fresh chopped cilantro
  • 2 green onions (chopped)
  • 1 to 2 lemons (adjust to taste)

Instructions

  1. Begin by placing a large, heavy-bottomed pot over medium heat. Add half of your diced smoked bacon and cook until crispy.
  2. Remove the bacon with a slotted spoon, and let drain on paper towels. Leave about 2 tbsp bacon drippings in the pot.
  3. Add butter to the pot and melt it. Toss in the diced onion and cook until translucent, about 3-5 minutes.
  4. Stir in minced garlic and cook for an additional minute until fragrant.
  5. Add ground turkey, seasoning with salt and pepper. Cook until browned and no longer pink, breaking it into crumbles.
  6. Mix in fresh corn and diced fire-roasted bell peppers until combined.
  7. Sprinkle spices into the mixture and stir to coat.
  8. Pour in crushed tomatoes and chicken broth, scraping any bits stuck to the pot.
  9. Allow your chili to simmer on low heat for at least 30 minutes.
  10. Sauté the remaining bacon in a separate skillet until crisp and drizzle with 1 tbsp maple syrup for caramelizing.
  11. Fold in maple syrup to the chili before serving, adjusting sweetness as desired.
  12. Serve in bowls, garnishing with cilantro, green onions, lemon juice, and maple bacon bits.

Notes

This chili tastes even better the next day. Freeze for up to 3 months for longer storage.
