Description

Refreshing cucumber salad sandwiches with creamy filling, perfect for picnics or quick snacks.


Ingredients

Scale
  • 2 Fresh Cucumbers, thinly sliced
  • 1 cup Cream Cheese or Greek Yogurt
  • 1/4 cup Fresh Herbs (Dill, Mint, or Parsley), chopped
  • 4 slices Bread (whole grain, multigrain, or white)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a mixing bowl, combine cream cheese (or yogurt) with fresh herbs, salt, and pepper until creamy.
  2. Thinly slice the cucumbers and set them aside.
  3. Spread an even layer of the herb-infused filling on a slice of bread and layer cucumber slices on top.
  4. Top with another slice of bread, pressing gently, then cut into quarters or halves.
  5. Chill the sandwiches in the fridge for 30 minutes before serving.

Notes

Keep cucumbers cold until ready to use for extra crispiness. Allow the filling to chill for better flavor melding.
