Description

A comforting pasta dish featuring a creamy sauce with seasonal vegetables, perfect for any occasion.


Ingredients

  • 8 oz Pasta (spaghetti, fettuccine, or penne)
  • 2 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 2 cups Vegetables (bell peppers, spinach, or zucchini)
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, grated
  • Salt and Pepper to taste

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, drain and reserve a cup of pasta water.
  2. Sauté Aromatics: In a large skillet, heat olive oil and sauté garlic and onion until onion is translucent.
  3. Add Vegetables: Include chopped veggies and sauté until they soften, around 4-5 minutes.
  4. Create the Sauce: Stir in heavy cream and simmer until thickened, 3-4 minutes, adding reserved pasta water if needed.
  5. Mix in the Pasta: Toss the cooked pasta with the sauce and sprinkle with parmesan, stirring until melted.
  6. Serve and Garnish: Plate the pasta and enjoy with fresh herbs or more parmesan.
