Ingredients

- 8 oz Pasta (spaghetti, fettuccine, or penne)
- 2 tbsp Olive Oil
- 2 cloves Garlic, minced
- 1 medium Onion, chopped
- 2 cups Vegetables (bell peppers, spinach, or zucchini)
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese, grated
- Salt and Pepper to taste
Instructions
- Prepare the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, drain and reserve a cup of pasta water.
- Sauté Aromatics: In a large skillet, heat olive oil and sauté garlic and onion until onion is translucent.
- Add Vegetables: Include chopped veggies and sauté until they soften, around 4-5 minutes.
- Create the Sauce: Stir in heavy cream and simmer until thickened, 3-4 minutes, adding reserved pasta water if needed.
- Mix in the Pasta: Toss the cooked pasta with the sauce and sprinkle with parmesan, stirring until melted.
- Serve and Garnish: Plate the pasta and enjoy with fresh herbs or more parmesan.
