Description

A tart and refreshing sauce made from rhubarb, sugar, and spices, perfect for a variety of dishes.


Ingredients

Scale
  • 3 cups chopped rhubarb (1/2 inch pieces)
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 teaspoon cinnamon (optional)
  • Pinch of salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Place the chopped rhubarb in a heavy-bottomed saucepan or Dutch oven.
  2. Add in the sugar, water, a pinch of salt, and cinnamon (if desired).
  3. Stir well to combine.
  4. Heat the mixture over medium heat, stirring constantly until the sugar dissolves.
  5. Reduce the heat to low and let it simmer for about 10 minutes, stirring occasionally.
  6. Remove from heat and stir in the vanilla extract.
  7. Serve warm or chill it before serving.

Notes

This sauce can be made ahead of time and tastes better after a day or two. Consider adding other fruits like strawberries or apples for variety.
