A tart and refreshing sauce made from rhubarb, sugar, and spices, perfect for a variety of dishes.
Ingredients

- 3 cups chopped rhubarb (1/2 inch pieces)
- 1/2 cup sugar
- 1/2 cup water
- 1/2 teaspoon cinnamon (optional)
- Pinch of salt
- 1/2 teaspoon vanilla extract
Instructions
- Place the chopped rhubarb in a heavy-bottomed saucepan or Dutch oven.
- Add in the sugar, water, a pinch of salt, and cinnamon (if desired).
- Stir well to combine.
- Heat the mixture over medium heat, stirring constantly until the sugar dissolves.
- Reduce the heat to low and let it simmer for about 10 minutes, stirring occasionally.
- Remove from heat and stir in the vanilla extract.
- Serve warm or chill it before serving.
Notes
This sauce can be made ahead of time and tastes better after a day or two. Consider adding other fruits like strawberries or apples for variety.
