- 2 tablespoons kosher salt

- 1 tablespoon onion powder

- Wood chips for smoking (hickory or oak)
Instructions
- Preheat your smoker to 225°F (107°C).
- Rub the prime rib with olive oil, then season generously with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Place the wood chips in the smoker according to the manufacturer’s instructions.
- Put the seasoned prime rib on the smoker rack, fat side up.
- Smoke the prime rib until it reaches an internal temperature of 130°F (54°C) for medium-rare, about 4-6 hours.
- Remove the prime rib from the smoker and let it rest for at least 20 minutes before slicing.
- Slice and serve with your favorite sides.
