- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 8 oz cream cheese or mascarpone
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 2 cups heavy cream (well chilled)
- 1 cup finely diced strawberries
- 1 cup sliced strawberries (for garnish; optional)
- 2 tbsp powdered sugar (for dusting)
Instructions
- Combine 1 cup water and 1/2 cup unsalted butter in a medium saucepan, adding 1/4 teaspoon salt. Bring to a gentle boil.
- Remove from heat and stir in 1 cup of all-purpose flour until combined.
- Allow the dough to cool for 5 minutes, then beat in 4 large eggs one at a time.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Transfer the dough to a piping bag and pipe small mounds onto the prepared baking sheet.
- Bake for 20-25 minutes until golden brown and puffed.
- Whip 2 cups of well-chilled heavy cream until soft peaks form.
- Beat together 8 oz of softened cream cheese, 1/2 cup powdered sugar, and 1 teaspoon vanilla extract until creamy.
- Fold the whipped cream with the cream cheese mixture and mix in 1 cup of finely diced strawberries.
- Slice the tops off the cooled choux pastry shells, fill with the creamy strawberry filling, and cap with the tops.
- Dust with powdered sugar and garnish with sliced strawberries.
Notes
These cream puffs are best enjoyed the same day but can be stored in the refrigerator for a short time.
