Ingredients

- 6 egg whites
- 1/2 cup bell peppers, diced
- 1/2 cup spinach, chopped
- 1/4 cup onion, diced
- 1/4 cup cheese (optional)
- Salt and pepper to taste
- Cooking spray or oil
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk the egg whites until slightly frothy.
- Fold in the diced bell peppers, chopped spinach, diced onions, cheese (if desired), salt, and pepper.
- Grease a muffin tin with cooking spray or oil.
- Pour the egg mixture into the muffin cups, filling each about 3/4 full.
- Bake for 15-20 minutes, or until set and golden on top.
- Allow to cool for a few minutes before removing them from the tin.
- Serve warm or store in the refrigerator.
