Description

Fluffy and colorful egg white bites packed with fresh vegetables, perfect for a nourishing breakfast.


Ingredients

Scale
  • 6 egg whites
  • 1/2 cup bell peppers, diced
  • 1/2 cup spinach, chopped
  • 1/4 cup onion, diced
  • 1/4 cup cheese (optional)
  • Salt and pepper to taste
  • Cooking spray or oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk the egg whites until slightly frothy.
  3. Fold in the diced bell peppers, chopped spinach, diced onions, cheese (if desired), salt, and pepper.
  4. Grease a muffin tin with cooking spray or oil.
  5. Pour the egg mixture into the muffin cups, filling each about 3/4 full.
  6. Bake for 15-20 minutes, or until set and golden on top.
  7. Allow to cool for a few minutes before removing them from the tin.
  8. Serve warm or store in the refrigerator.

Notes

These bites refrigerate beautifully and can make a great meal prep option. Customize with different herbs or vegetables as desired.
