- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 1 cup cherry filling
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, sift together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs and sugar until light and fluffy.
- Mix in the vanilla extract and gradually add the dry ingredients.
- Spread the batter evenly on the prepared baking sheet.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Once baked, roll the cake in the parchment paper and let it cool.
- Whip the heavy cream until stiff peaks form.
- Unroll the cooled cake, spread cherry filling and whipped cream, then roll it back up.
- Chill for at least 1 hour before serving and garnish with chocolate shavings.

- Ensure the cake is completely cool before rolling to prevent cracking.
- Use fresh cherries for a more vibrant flavor.
- This cake can be made a day in advance for better flavor.
