- 1 cup dried chickpeas
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1/2 tsp baking powder
- Oil for frying
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup tzatziki sauce
Instructions
- Soak the chickpeas in water overnight.
- Drain and rinse the chickpeas, then blend them with onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, cayenne pepper, and baking powder until a coarse mixture forms.
- Form the mixture into small balls or patties.
- Heat oil in a frying pan over medium heat and fry the falafel until golden brown on all sides.
- In a bowl, layer mixed greens, cherry tomatoes, and cucumber.
- Top with the fried falafel and drizzle with tzatziki sauce.
- Serve immediately and enjoy!
