Ingredients

  • 1 cup dried chickpeas
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/2 tsp baking powder
  • Oil for frying
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup tzatziki sauce

Instructions

  1. Soak the chickpeas in water overnight.
  2. Drain and rinse the chickpeas, then blend them with onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, cayenne pepper, and baking powder until a coarse mixture forms.
  3. Form the mixture into small balls or patties.
  4. Heat oil in a frying pan over medium heat and fry the falafel until golden brown on all sides.
  5. In a bowl, layer mixed greens, cherry tomatoes, and cucumber.
  6. Top with the fried falafel and drizzle with tzatziki sauce.
