Ingredients

Instructions

  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, nutmeg, and cinnamon.
  3. In another bowl, mix the eggnog, melted butter, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the raisins or cranberries.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
