- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup whipped cream
- 1/2 cup graham cracker crumbs
- 1/4 cup butter, melted
- 1/4 cup fruit preserves (strawberry or raspberry)
- 1/4 cup red and blue sprinkles
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine cream cheese, sugar, and vanilla extract until smooth.
- Fold in the whipped cream gently until well combined.
- In another bowl, mix graham cracker crumbs and melted butter until crumbly.
- Press the crumb mixture into the bottom of mini cupcake liners in a muffin tin.
- Fill each liner with the cheesecake mixture.
- Top with fruit preserves and sprinkle with red and blue sprinkles.
- Bake for 15-20 minutes or until set.
- Let cool and refrigerate for at least 2 hours before serving.
