- 4 large jalapenos
- 1 cup cream cheese
- 1/2 cup shredded cheddar cheese

- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the jalapenos in half lengthwise and remove the seeds.
- In a bowl, mix cream cheese, cheddar cheese, bacon, garlic powder, and onion powder until well combined.
- Stuff each jalapeno half with the cheese mixture.
- Place the stuffed jalapenos on a baking sheet and drizzle with olive oil.
- Bake for 20-25 minutes or until the jalapenos are tender and the cheese is bubbly.
- In a serving bowl, layer cooked quinoa, cherry tomatoes, and avocado slices.
- Top with the baked jalapeno poppers and garnish with fresh cilantro.
