Ingredients

  • 1 bunch of asparagus
  • 2 medium zucchinis
  • 2 medium yellow squashes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and trim the asparagus, and slice the zucchinis and squashes into thin rounds.
  3. In a large bowl, combine the asparagus, zucchini, and squash.
  4. Drizzle with olive oil, garlic powder, salt, and pepper, and toss to coat.
  5. Spread the vegetables evenly on a baking sheet.
  6. Bake for 15-20 minutes, or until tender and slightly caramelized.
  7. Remove from the oven and drizzle with lemon juice before serving.
