Description

Fluffy Japanese Cotton Cheesecake Cupcakes are light, airy, and incredibly delicious, making them a perfect treat for any occasion.


Ingredients

  • 1 cup cream cheese
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 320°F (160°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, beat the cream cheese and butter until smooth.
  3. Add the sugar and mix until well combined.
  4. In a separate bowl, whisk the eggs and milk together, then add to the cream cheese mixture.
  5. In another bowl, sift together the flour, cornstarch, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the vanilla extract.
  8. Pour the batter into the prepared muffin tin, filling each liner about 2/3 full.
  9. Bake for 20-25 minutes or until the tops are lightly golden and a toothpick comes out clean.
  10. Let the cupcakes cool before serving.

  • For a richer flavor, use full-fat cream cheese.
