Instructions
- In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.
- In a blender, puree the fresh raspberries until smooth.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Gently fold the raspberry puree into the whipped cream.
- Heat the bloomed gelatin in the microwave for about 10 seconds until melted, then fold it into the raspberry mixture.
- Pour the mousse into serving dishes and refrigerate for at least 2 hours to set.
- Serve chilled, garnished with additional raspberries if desired.
Notes
- For a sweeter mousse, adjust the amount of powdered sugar to taste.
