Fresh Raspberry Cloud Mousse is a light and airy dessert that combines the tartness of fresh raspberries with a creamy, fluffy texture, making it a perfect treat for any occasion.

Ingredients

Scale
  • 2 cups fresh raspberries
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin
  • 3 tablespoons water

Instructions

  1. In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.
  2. In a blender, puree the fresh raspberries until smooth.
  3. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  4. Gently fold the raspberry puree into the whipped cream.
  5. Heat the bloomed gelatin in the microwave for about 10 seconds until melted, then fold it into the raspberry mixture.
  6. Pour the mousse into serving dishes and refrigerate for at least 2 hours to set.
  7. Serve chilled, garnished with additional raspberries if desired.

Notes
