Description

Delightful brookies combining rich brownies and chewy chocolate chip cookies, offering a perfect contrast of textures and flavors.


Ingredients

Scale
  • 225g (1 ¼ cups) Dark Chocolate, chopped
  • 56g (¼ cup) Butter (salted or unsalted)
  • 2 Eggs, room temperature
  • 100g (¾ cup) Caster or Granulated Sugar
  • 90g (½ cup) Demerara or Raw Sugar
  • 1 teaspoon Vanilla Extract
  • 95g (¾ cup) Plain (all-purpose) Flour
  • 2 tablespoons Cocoa Powder
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt
  • 85g (½ cup) Dark or Milk Chocolate Chips

Instructions

  1. Preheat your oven to 160°C (320°F) with a fan or 170°C (338°F) for conventional heating.
  2. Line a baking tray with parchment paper.
  3. Melt the chopped dark chocolate and butter together in a heatproof bowl over a pot of simmering water, stirring until smooth. Stir in the vanilla extract.
  4. In a separate bowl, whisk the eggs and sugars together until light and fluffy.
  5. Sift together the plain flour, cocoa powder, baking powder, and salt in another bowl. Fold in the chocolate chips.
  6. Gradually fold the melted chocolate mixture into the egg-sugar mixture, then gently fold in the dry ingredients.
  7. Use a cookie scoop to drop tablespoons of batter onto the prepared tray, spacing them apart.
  8. Bake for 12-14 minutes, until the edges set but the centers are soft. The tops should be slightly crackled.
  9. Allow to cool slightly on the tray before transferring to a wire rack.

Notes

Optionally sprinkle with sea salt on warm brookies for extra flavor. Store in an airtight container for up to five days.
