  • 1 cup heavy whipping cream, cold plus more for brushing
  • 1 teaspoon pure vanilla extract
  • 1 cup powdered sugar, sifted
  • 12 tablespoons milk

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, whisk together the Funfetti cake mix, all-purpose flour, salt, and rainbow sprinkles.
  2. Cut in the Butter: Using a pastry cutter or two forks, cut the cold butter pieces into the flour mixture until it resembles coarse crumbs.
  3. Mix Wet Ingredients: Whisk the vanilla extract into the cold heavy cream in a separate bowl.
  4. Create the Dough: Make a well in the center of your flour-butter mixture. Pour the liquid ingredients into the well in two separate parts, stirring gently until a soft dough forms.
  5. Knead Lightly: Gently pour the dough onto a lightly floured surface. Turn it a couple of times until it just comes together.
  6. Shape the Dough: Form the dough into a 7-inch circle about ¾-inch high. Cut this disk into eight even triangles.
  7. Chill the Scones: Place the dough triangles onto a parchment-lined baking sheet and refrigerate for 30 minutes to 1 hour.
  8. Bake to Perfection: Preheat your oven to 400°F. Brush the tops of the chilled scones with heavy cream and bake for 18-20 minutes until lightly golden brown.
