Deliciously sweet and savory garlic butter roasted sweet potatoes, perfect as a side dish.

- 2 large sweet potatoes, peeled and cubed
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the cubed sweet potatoes, melted butter, minced garlic, salt, pepper, and thyme. Toss until the sweet potatoes are well coated.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For extra flavor, add a pinch of cayenne pepper.
- These can be served warm or at room temperature.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
