Description

A delicious and comforting dish featuring garlic herb chicken served with creamy mashed potatoes and sweet glazed carrots.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 2 cups carrots, sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon butter (for carrots)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  3. Coat the chicken breasts with the garlic herb mixture and place them in a baking dish.
  4. Bake the chicken for 25-30 minutes or until cooked through.
  5. Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
  6. Drain the potatoes and mash them with milk and butter until smooth.
  7. In a skillet, melt 1 tablespoon of butter and add sliced carrots.
  8. Sprinkle brown sugar over the carrots and sauté until they are tender and glazed, about 5-7 minutes.
  9. Serve the garlic herb chicken with mashed potatoes and glazed carrots on the side.

Notes

  • For extra flavor, marinate the chicken for a few hours before baking.
