Ingredients

  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup vegetable oil, for frying
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1/4 cup soy sauce
  • 1/4 cup sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha or chili sauce
  • 1 green onion, chopped (for garnish)

Instructions

  1. Toss chicken pieces with cornstarch until evenly coated.
  2. Dip the coated chicken into the beaten eggs.
  3. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  4. Fry coated chicken in batches for 5-7 minutes until golden brown; drain on paper towels.
  5. In the same skillet, sauté minced garlic and ginger until fragrant.
  6. Mix soy sauce, sugar, rice vinegar, sesame oil, and sriracha; pour into skillet and stir until thickened.
  7. Add crispy chicken back into skillet, tossing to coat in sauce.
  8. Garnish with chopped green onion and serve.

Notes

For extra flavor, marinate chicken in soy sauce and ginger a few hours before cooking, and consider adding vegetables like bell peppers or broccoli for more color and crunch.
