Instructions
- Heat a drizzle of oil in a large pot over medium heat. Add minced ginger and garlic, sautéing until fragrant, about 1-2 minutes.
- Toss in the diced chicken, cooking until it turns golden brown.
- Pour in the chicken broth, then add the sliced carrots and celery, bringing everything to a boil.
- Reduce the heat to low and let the mixture simmer for about 10 minutes.
- Add in the noodles and soy sauce, letting them cook until tender.
- Season with salt and pepper to taste.
- Serve hot and garnish with fresh parsley or sliced green onions.
