Description

Ingredients

  • 3 cloves garlic, minced
  • 1 lb chicken breast, diced
  • 6 cups chicken broth
  • 1 cup noodles (egg or rice noodles)
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 2 tbsp soy sauce
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish

Instructions

  1. Heat a drizzle of oil in a large pot over medium heat. Add minced ginger and garlic, sautéing until fragrant, about 1-2 minutes.
  2. Toss in the diced chicken, cooking until it turns golden brown.
  3. Pour in the chicken broth, then add the sliced carrots and celery, bringing everything to a boil.
  4. Reduce the heat to low and let the mixture simmer for about 10 minutes.
  5. Add in the noodles and soy sauce, letting them cook until tender.
  6. Season with salt and pepper to taste.
  7. Serve hot and garnish with fresh parsley or sliced green onions.

Notes

A splash of lime juice can brighten the flavors, while a pinch of red pepper flakes can add an exciting kick.
