Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, mix gingerbread cookie crumbs and melted butter until combined.
- Press the mixture into the bottom of the prepared baking pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, ground ginger, cinnamon, nutmeg, and salt until fully incorporated.
- Pour the cheesecake mixture over the crust in the baking pan.
- Bake for 30-35 minutes or until the center is set and the edges are lightly golden.
- Allow to cool completely, then refrigerate for at least 4 hours before slicing into bars.
