- 2 medium boneless, skinless chicken breasts
- 4 cups fresh broccoli florets
- 2 cups cooked brown rice (or quinoa for a gluten-free option)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- A pinch of paprika (optional)
- ½ cup plain nonfat Greek yogurt
- 2 tablespoons light mayonnaise
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 1–2 tablespoons water (to thin)

Instructions
- Preheat your grill or grill pan over medium-high heat.
- Season the chicken breasts with salt, pepper, and paprika.
- Grill the chicken for 6–7 minutes per side or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest before slicing.
- Bring a pot of water to a boil and place the broccoli in a steamer basket.
- Steam for 4–5 minutes until bright green and just tender.
- In a bowl, whisk together Greek yogurt, light mayonnaise, minced garlic, lemon juice, salt, and pepper until smooth.
- Divide the cooked rice among four bowls, and top with sliced grilled chicken, steamed broccoli, and drizzle creamy garlic sauce over the top.
Notes
Customize by swapping chicken for tofu or shrimp and feel free to add toppings like avocado or cherry tomatoes.
