Ingredients

- 2 cups corn kernels (fresh or frozen)
- 1 can (15 oz) black beans, rinsed and drained
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tsp cumin
- Salt and pepper to taste
- 12 small tortilla cups
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10 minutes, turning occasionally until charred.
- Remove corn from the grill and let it cool before cutting the kernels off the cob.
- In a large bowl, combine the grilled corn, black beans, red bell pepper, red onion, and cilantro.
- Add lime juice, cumin, salt, and pepper to the mixture and stir well.
- Fill each tortilla cup with the corn and black bean mixture.
- Serve immediately and enjoy!
Notes
- For extra flavor, add diced jalapeños for a spicy kick.
- This salsa can be made ahead of time and stored in the refrigerator for up to 2 days.
