Ingredients

  • 2 cups corn kernels (fresh or frozen)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tsp cumin
  • Salt and pepper to taste
  • 12 small tortilla cups

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10 minutes, turning occasionally until charred.
  3. Remove corn from the grill and let it cool before cutting the kernels off the cob.
  4. In a large bowl, combine the grilled corn, black beans, red bell pepper, red onion, and cilantro.
  5. Add lime juice, cumin, salt, and pepper to the mixture and stir well.
  6. Fill each tortilla cup with the corn and black bean mixture.
