Instructions
- In a bowl, mix coconut milk, soy sauce, brown sugar, lime juice, garlic, ginger, and red curry paste to create the marinade.
- Add the chicken cubes to the marinade, cover, and refrigerate for at least 1 hour (or overnight for best flavor).
- Preheat the grill to medium-high heat.
- Thread the marinated chicken onto skewers.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
