Description

Delicious grilled chicken skewers marinated in a flavorful Thai coconut sauce, perfect for impressing guests at any gathering.

Ingredients

Scale
  • 1 lb chicken breast, cut into cubes
  • 1 cup coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp red curry paste
  • Skewers (soaked in water if wooden)

Instructions

  1. In a bowl, mix coconut milk, soy sauce, brown sugar, lime juice, garlic, ginger, and red curry paste to create the marinade.
  2. Add the chicken cubes to the marinade, cover, and refrigerate for at least 1 hour (or overnight for best flavor).
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken onto skewers.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Serve hot with your choice of dipping sauce or side.

Notes

  • For extra flavor, add vegetables like bell peppers or onions to the skewers.
  • Make sure to soak wooden skewers in water for at least 30 minutes to prevent burning.
