- 2 cups cooked wild rice
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 2 cups chicken broth
- 1 cup cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cooked wild rice, diced chicken, onion, celery, and carrots.
- In a separate bowl, mix together the chicken broth, cream of mushroom soup, garlic powder, thyme, salt, and pepper.
- Pour the soup mixture over the rice and chicken mixture and stir until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Top with shredded cheddar cheese.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the casserole is bubbly.
- Let it cool for a few minutes before serving.
