Description

A comforting and hearty casserole featuring tender chicken, wild rice, and a medley of vegetables, perfect for a cozy family meal.


Ingredients

Scale
  • 2 cups cooked wild rice
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 cups chicken broth
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked wild rice, diced chicken, onion, celery, and carrots.
  3. In a separate bowl, mix together the chicken broth, cream of mushroom soup, garlic powder, thyme, salt, and pepper.
  4. Pour the soup mixture over the rice and chicken mixture and stir until well combined.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Top with shredded cheddar cheese.
  7. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the casserole is bubbly.
  8. Let it cool for a few minutes before serving.
