Description

Ingredients

  • 2 Chicken Breasts
  • 1 Fresh Pineapple
  • 1 cup Coconut Rice
  • 2 tablespoons Olive Oil
  • 3 tablespoons Soy Sauce
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • Salt and Pepper to taste
  • 2 Green Onions, sliced

Instructions

  1. Marinate the Chicken: Combine olive oil, soy sauce, minced garlic, minced ginger, salt, and pepper in a mixing bowl. Add the chicken breasts and let them marinate for at least 30 minutes.
  2. Preheat the Grill: Heat your grill or grill pan over medium heat.
  3. Grill the Chicken: Place the marinated chicken on the grill, cooking for 6-8 minutes per side, until cooked through and has grill marks.
  4. Grill the Pineapple: Slice the pineapple into thick rings and place them on the grill for about 2-3 minutes on each side until caramelized.
  5. Prepare the Coconut Rice: Cook rice in coconut milk according to package instructions.
  6. Assemble the Dish: Serve the grilled chicken over coconut rice, topped with grilled pineapple and garnished with green onions.

Notes

For deeper flavor, marinate the chicken longer and make coconut rice in advance. Avoid skipping coconut milk for a flavorful rice base.
