Description

A comforting and hearty beef stew filled with tender beef, potatoes, and carrots, perfect for cozy nights.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 medium potatoes, peeled and diced
  • 3 large carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside. In the same pot, add onions and garlic, sauté until translucent.
  4. Add the beef back to the pot along with potatoes, carrots, beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours until the beef is tender.
  6. Adjust seasoning if necessary and serve hot.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Feel free to add other vegetables like peas or green beans.
  • This stew can be made a day ahead and tastes even better the next day.
