A comforting and aromatic slow-cooked Indian beef curry that envelops tender beef in a rich blend of spices, perfect for cozy gatherings.

- 1 tablespoon Oil or Ghee
- 1000 grams Chuck or Braising Steak
- 1 cup Onions, chopped
- 2 cloves Garlic, chopped
- 2 cm Fresh Ginger, chopped
- 0.5 teaspoon Ground Turmeric
- 2 teaspoons Ground Coriander
- 1 teaspoon Garam Masala
- 0.5 teaspoon Ground Cumin
- 0.5 teaspoon Red Chili Powder
- 1 cup Beef Broth
- 0.5 cup Water
- 3 cm Cinnamon Stick
- 1 piece Dried Bay Leaf
- 2 tablespoons Chopped Cilantro (Plus more for garnish)
- Salt to taste
Instructions
- In a skillet, heat the oil over medium-high heat. Once shimmering, add the chopped onions and sauté until golden brown.
- Stir in the garlic and ginger, cooking until fragrant, about 1 minute.
- Add the chuck or braising steak to the skillet. Brown on all sides.
- Sprinkle in the ground turmeric, coriander, garam masala, cumin, and red chili powder. Stir to coat the meat and onion mixture.
- Transfer the beef mixture into the slow cooker. Pour in beef broth and water, adding the cinnamon stick and bay leaf.
- Season with salt according to taste. Cover and set to low for 6-8 hours or high for 4-6 hours, until the beef is fork-tender.
- Before serving, discard the cinnamon stick and bay leaf. Stir in chopped cilantro and garnish with more cilantro.
Notes
For a creamier sauce, stir in a splash of coconut milk or yogurt just before serving. Ensure you don’t overcrowd the slow cooker for even cooking.
