- 2 whole wheat tortillas
- 1 cup cooked chicken, shredded
- 1/2 cup ranch dressing
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup bell peppers, sliced
- 1/4 cup green onions, chopped
- Cooking spray or olive oil
Instructions
- Preheat a skillet over medium heat and lightly grease with cooking spray or olive oil.
- In a bowl, mix the shredded chicken with ranch dressing until well coated.
- Place one tortilla in the skillet and layer half of the cheese, followed by the chicken mixture, bell peppers, and green onions.
- Top with the remaining cheese and place the second tortilla on top.
- Cook for 3-4 minutes until the bottom tortilla is golden brown, then carefully flip and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from the skillet, slice into wedges, and serve warm.
Notes
- Feel free to add other vegetables like spinach or mushrooms for extra nutrition.
- For a spicier version, add jalapeños or hot sauce.
