Ingredients

  • 2 whole wheat tortillas
  • 1 cup cooked chicken, shredded
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup bell peppers, sliced
  • 1/4 cup green onions, chopped
  • Cooking spray or olive oil

Instructions

  1. Preheat a skillet over medium heat and lightly grease with cooking spray or olive oil.
  2. In a bowl, mix the shredded chicken with ranch dressing until well coated.
  3. Place one tortilla in the skillet and layer half of the cheese, followed by the chicken mixture, bell peppers, and green onions.
  4. Top with the remaining cheese and place the second tortilla on top.
  5. Cook for 3-4 minutes until the bottom tortilla is golden brown, then carefully flip and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  6. Remove from the skillet, slice into wedges, and serve warm.
