Description

Homemade Blueberry Protein Muffins are a nutritious and delicious snack packed with protein and bursting with fresh blueberries.


Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup Greek yogurt
  • 2 eggs
  • 1/2 cup honey
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the rolled oats, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the Greek yogurt, eggs, honey, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, stirring until just mixed.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before serving.

Notes

  • For added sweetness, you can increase the amount of honey.
  • These muffins can be stored in an airtight container for up to a week.
  • Feel free to substitute other fruits for blueberries if desired.
