- 1/2 cup Chipotle Honey Sauce
- Salt & Pepper to taste
- 1 cup Smoked Gouda Cheese, shredded
- 2 pounds Potatoes, peeled and chopped
- 1/4 cup Butter
- 1/2 cup Milk
Instructions
- Marinate the chicken thighs in chipotle honey sauce for a minimum of 30 minutes.
- Preheat the oven to 400°F (200°C).
- Transfer marinated chicken thighs to a baking sheet and season with salt and pepper.
- Bake for 25-30 minutes until the chicken is cooked through and caramelized.
- Boil chopped potatoes in salted water until tender, about 15-20 minutes.
- Drain and mash potatoes with butter, milk, and smoked Gouda until smooth.
- Serve chicken over a scoop of smoked Gouda mashed potatoes.
Notes
For deeper flavor, marinate chicken thighs overnight. You can substitute chicken breasts or use olive oil for a lighter mashed potato option.
