Ingredients

  • 4 Chicken Thighs
  • 1/2 cup Chipotle Honey Sauce
  • Salt & Pepper to taste
  • 1 cup Smoked Gouda Cheese, shredded
  • 2 pounds Potatoes, peeled and chopped
  • 1/4 cup Butter
  • 1/2 cup Milk

Instructions

  1. Marinate the chicken thighs in chipotle honey sauce for a minimum of 30 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. Transfer marinated chicken thighs to a baking sheet and season with salt and pepper.
  4. Bake for 25-30 minutes until the chicken is cooked through and caramelized.
  5. Boil chopped potatoes in salted water until tender, about 15-20 minutes.
  6. Drain and mash potatoes with butter, milk, and smoked Gouda until smooth.
  7. Serve chicken over a scoop of smoked Gouda mashed potatoes.

Notes

For deeper flavor, marinate chicken thighs overnight. You can substitute chicken breasts or use olive oil for a lighter mashed potato option.
