A delicious and healthy Honey Garlic Chicken & Roasted Veggie Rice Bowl that combines tender chicken with roasted vegetables and a sweet garlic sauce.

- 1 lb chicken breast, diced
- 1 cup brown rice
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix honey, soy sauce, and minced garlic to create the marinade.
- Add diced chicken to the marinade and let it sit for at least 30 minutes.
- While the chicken marinates, cook the brown rice according to package instructions.
- On a baking sheet, toss mixed vegetables with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes.
- In a skillet, cook the marinated chicken over medium heat until fully cooked, about 7-10 minutes.
- Serve the cooked chicken over brown rice and top with roasted vegetables.
Notes
- For a spicier kick, add red pepper flakes to the marinade.
- Feel free to use any vegetables you have on hand.
- This dish can be made ahead and stored in the fridge for meal prep.
