Ingredients

  • 2 cups water or broth
  • 1 pound meatballs (beef, turkey, chicken, or plant-based)
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 cup vegetables (peas, carrots, or bell peppers)
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine rice and water or broth in a saucepan; bring to a boil, then simmer for 15 minutes until fluffy.
  3. Mix honey, soy sauce, minced garlic, and ginger in a bowl to create the glaze.
  4. Combine cooked rice, meatballs, and vegetables in a baking dish and stir gently.
  5. Pour the honey garlic glaze over the mixture and stir to coat.
  6. Cover the dish with aluminum foil and bake for 25-30 minutes.
  7. Remove the foil and bake for an additional 10 minutes to caramelize the top.
  8. Serve hot, garnished with green onions if desired.
