Ingredients

  • 23 pounds pork loin
  • 1 cup breadcrumbs
  • 1/2 cup chopped apples
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix breadcrumbs, chopped apples, walnuts, and cranberries.
  3. In another bowl, combine honey, Dijon mustard, salt, and pepper.
  4. Cut a pocket in the pork loin and stuff it with the breadcrumb mixture.
  5. Rub the outside of the pork loin with olive oil and the honey mixture.
  6. Place the pork loin in a roasting pan and roast for about 1 hour or until the internal temperature reaches 145°F (63°C).
  7. Let it rest for 10 minutes before slicing and serving.

  • For added flavor, marinate the pork loin overnight.
