A delicious and savory honey-glazed stuffed roasted pork loin that is perfect for any special occasion.
Ingredients

- 2–3 pounds pork loin
- 1 cup breadcrumbs
- 1/2 cup chopped apples
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix breadcrumbs, chopped apples, walnuts, and cranberries.
- In another bowl, combine honey, Dijon mustard, salt, and pepper.
- Cut a pocket in the pork loin and stuff it with the breadcrumb mixture.
- Rub the outside of the pork loin with olive oil and the honey mixture.
- Place the pork loin in a roasting pan and roast for about 1 hour or until the internal temperature reaches 145°F (63°C).
- Let it rest for 10 minutes before slicing and serving.
Notes
- For added flavor, marinate the pork loin overnight.
- Serve with roasted vegetables or a fresh salad.
- Leftovers can be stored in the refrigerator for up to 3 days.
