Description

A refreshing and flavorful stack of grilled honey lime chicken, creamy avocado, and cilantro lime rice that captures the essence of summer.


Ingredients

  • 4 chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 cup cilantro lime rice
  • 2 avocados, sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a mixing bowl, whisk together the honey and lime juice until well combined.
  2. Submerge each chicken breast in the marinade and allow to marinate for at least 30 minutes.
  3. Preheat your grill or non-stick pan over medium-high heat. Remove the chicken from the marinade and season with salt and pepper.
  4. Cook the chicken for about 6-7 minutes per side or until golden brown and reaches an internal temperature of 165°F (75°C).
  5. In a serving dish, layer cilantro lime rice, followed by the grilled honey lime chicken and fresh avocado slices.
  6. Season with additional salt and pepper, and garnish with fresh cilantro before serving.
