- 4 chicken breasts, skinless and boneless
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 cups rice (Jasmine or basmati)
- 4 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: chopped herbs for garnish (fresh parsley or chives)
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the honey and Dijon mustard in a bowl until well combined.
- Place chicken breasts in a baking dish and drizzle the honey mustard mixture over them, coating evenly.
- Bake for 25-30 minutes or until the chicken is fully cooked through (165°F/75°C).
- Meanwhile, heat olive oil in a saucepan over medium heat and toast the rice for 2-3 minutes.
- Pour in the chicken broth, bring to a boil, then reduce to low heat and cover, simmering for 15-20 minutes until rice is tender.
- Serve the chicken over the aromatic rice and garnish with fresh herbs if desired.
Notes
Marinate the chicken overnight for deeper flavor. Use an air fryer for a quicker, crispy result.
