Description

A delightful and creamy cheesecake infused with the sweet flavor of honeycomb, perfect for any occasion.


Ingredients

Scale
  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 600g cream cheese
  • 150g sugar
  • 3 large eggs
  • 200ml sour cream
  • 100g honeycomb, crushed
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Crush the digestive biscuits and mix with melted butter.
  3. Press the biscuit mixture into the base of a springform pan.
  4. In a bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the sour cream, crushed honeycomb, and vanilla extract.
  7. Pour the cheesecake mixture over the biscuit base.
  8. Bake in the preheated oven for 50-60 minutes until set.
  9. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a firmer cheesecake, bake a little longer.
  • Serve with extra honeycomb on top for decoration.
  • Can be made a day in advance for better flavor.
