- 2 large sweet potatoes
- 1 lb ground beef
- 1/4 cup hot honey
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- In a skillet, cook the ground beef over medium heat until browned.
- Add the diced bell peppers, onions, garlic powder, paprika, salt, and pepper to the beef, cooking until the vegetables are soft.
- Stir in the hot honey and mix well.
- Once the sweet potatoes are done, cut them in half lengthwise and scoop out a bit of the flesh to create a boat.
- Fill each sweet potato half with the hot honey beef mixture.
- Garnish with chopped green onions before serving.
