A cozy and rich Chicken Stroganoff that blends tender chicken, earthy mushrooms, and a creamy sauce over noodles or rice.

- 1 lb chicken breast, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup chicken broth
- 1 cup sour cream
- 2 tbsp olive oil
- 2 tbsp flour
- Salt and pepper to taste
- Cooked egg noodles or rice
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until they become translucent and fragrant, about 4–5 minutes.
- Add the sliced chicken breast to the skillet, ensuring the pieces aren’t overcrowded. Cook until browned on all sides, about 6–8 minutes.
- Stir in the sliced mushrooms. Cook until they are tender and browned, about 5 more minutes.
- Sprinkle the flour over the chicken mixture, stirring well to coat everything evenly.
- Gradually add the chicken broth, stirring constantly until the mixture thickens, about 2–3 minutes.
- Reduce the heat and gently fold in the sour cream, mixing well until everything is heated through.
- Taste your dish and season with salt and pepper to your liking.
- Dish the Chicken Stroganoff over a bed of cooked egg noodles or rice and garnish with fresh parsley.
Notes
You can prepare the chicken and sauce a day in advance for convenience. Substitute gluten-free flour if needed.
