Description

A cozy and rich Chicken Stroganoff that blends tender chicken, earthy mushrooms, and a creamy sauce over noodles or rice.


Ingredients

  • 1 lb chicken breast, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tbsp olive oil
  • 2 tbsp flour
  • Salt and pepper to taste
  • Cooked egg noodles or rice

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until they become translucent and fragrant, about 4–5 minutes.
  2. Add the sliced chicken breast to the skillet, ensuring the pieces aren’t overcrowded. Cook until browned on all sides, about 6–8 minutes.
  3. Stir in the sliced mushrooms. Cook until they are tender and browned, about 5 more minutes.
  4. Sprinkle the flour over the chicken mixture, stirring well to coat everything evenly.
  5. Gradually add the chicken broth, stirring constantly until the mixture thickens, about 2–3 minutes.
  6. Reduce the heat and gently fold in the sour cream, mixing well until everything is heated through.
  7. Taste your dish and season with salt and pepper to your liking.
  8. Dish the Chicken Stroganoff over a bed of cooked egg noodles or rice and garnish with fresh parsley.

Notes

You can prepare the chicken and sauce a day in advance for convenience. Substitute gluten-free flour if needed.
