- 4 cups Vegetable Oil

- 2 tbsp Cajun Seasoning

- 2 tbsp Hot Sauce
- 1 tbsp Lemon Juice
Instructions
- Prep the Potatoes: Begin by peeling and slicing the Russet potatoes into thin strips, around 1/4 inch thick. Rinse them under cold water to remove excess starch.
- Soak: Place the cut fries in a bowl of cold water and soak for at least 30 minutes, or preferably overnight.
- Heat the Oil: In a heavy-bottomed pot, heat the vegetable oil to 350°F (175°C).
- Fry the Potatoes: In batches, add the soaked fries to the hot oil. Fry for 3-4 minutes until golden brown, then remove with a slotted spoon.
- Season and Garnish: In a bowl, toss the hot fries with Cajun seasoning. Garnish with fresh parsley.
- Prepare the Dipping Sauce: In a separate bowl, mix mayonnaise, hot sauce, lemon juice, and a pinch of salt until creamy.
- Serve with Love: Plate the crispy fries alongside the dip for serving.
