Instructions
- Cook Pasta: Bring a large pot of salted water to a boil and cook the linguine according to package directions. Remember to reserve ½ cup of pasta water before draining.
- Cook Chicken: In a large skillet, heat the olive oil over medium-high heat. Season chicken pieces with salt and pepper and cook for 5-7 minutes until browned and cooked through. Remove and set aside.
- Prepare Cowboy Butter Sauce: In the same skillet, melt the butter. Add minced garlic, paprika, and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add Flavor Components: Stir in Dijon mustard, lemon juice, lemon zest, and chicken broth (or reserved pasta water). Simmer while scraping any browned bits from the skillet’s bottom.
- Creamy Sauce Formation: Pour in heavy cream and half of the chopped parsley. Cook for 2 minutes until the sauce thickens slightly.
- Combine All: Return the chicken to the skillet, add cooked linguine and parmesan cheese. Toss together, using reserved pasta water as needed.
- Final Touches: Taste and season with salt and pepper. Garnish with remaining parsley and extra parmesan cheese. Serve immediately.
