Description

Grilled chicken laced with fresh lime and creamy avocado, delivering a delightful balance of flavors and textures.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe avocados
  • 23 vine-ripened tomatoes
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste

Instructions

  1. Whisk together lime juice, olive oil, garlic powder, cumin, salt, and pepper in a mixing bowl.
  2. Add the chicken breasts to the bowl and coat them well in the marinade.
  3. Marinate for at least 30 minutes, or longer if desired.
  4. Preheat the grill to medium-high heat.
  5. Grill the marinated chicken for about 6-7 minutes on each side until it reaches 165°F internally.
  6. Slice the avocados and tomatoes while the chicken is grilling.
  7. Remove the chicken from the grill and let it rest for a few minutes.
  8. Serve the grilled chicken topped with avocado and fresh tomatoes, drizzled with remaining marinade or lime juice.

Notes

For deeper flavor, marinate the chicken overnight. If you don’t have a grill, you can use an air fryer or bake at 400°F for 20-25 minutes.
