- 4 boneless, skinless chicken breasts
- 2 ripe avocados
- 2–3 vine-ripened tomatoes
- 1/4 cup freshly squeezed lime juice
- 1/4 cup extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper, to taste
Instructions
- Whisk together lime juice, olive oil, garlic powder, cumin, salt, and pepper in a mixing bowl.
- Add the chicken breasts to the bowl and coat them well in the marinade.
- Marinate for at least 30 minutes, or longer if desired.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for about 6-7 minutes on each side until it reaches 165°F internally.
- Slice the avocados and tomatoes while the chicken is grilling.
- Remove the chicken from the grill and let it rest for a few minutes.
- Serve the grilled chicken topped with avocado and fresh tomatoes, drizzled with remaining marinade or lime juice.
Notes
For deeper flavor, marinate the chicken overnight. If you don’t have a grill, you can use an air fryer or bake at 400°F for 20-25 minutes.
