Description

Succulent and smoky chicken marinated with lime and spices, topped with creamy California avocados and fresh tomatoes.


Ingredients

  • 4 Chicken Breasts
  • 2 California Avocados
  • 2 Fresh Tomatoes
  • Juice of 2 Limes
  • 3 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • Salt and Pepper to taste
  • 1 tsp Cumin
  • 1 tsp Chili Powder

Instructions

  1. In a mixing bowl, whisk together lime juice, olive oil, minced garlic, salt, pepper, cumin, and chili powder.
  2. Place chicken breasts into the marinade, ensuring they are well coated; cover and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill to medium-high.
  4. Grill chicken for 6-7 minutes on each side until cooked through, reaching an internal temperature of 165°F.
  5. While chicken grills, dice the avocados and tomatoes.
  6. Let chicken rest for a few minutes, then slice and top with diced avocado and tomatoes before serving.

Notes

For deeper flavor, marinate the chicken overnight. Can substitute with thighs for a richer taste.
