- 4 Chicken Breasts
- 2 California Avocados
- 2 Fresh Tomatoes
- Juice of 2 Limes
- 3 tbsp Olive Oil
- 3 cloves Garlic, minced
- Salt and Pepper to taste
- 1 tsp Cumin
- 1 tsp Chili Powder
Instructions
- In a mixing bowl, whisk together lime juice, olive oil, minced garlic, salt, pepper, cumin, and chili powder.
- Place chicken breasts into the marinade, ensuring they are well coated; cover and marinate in the refrigerator for at least 30 minutes.
- Preheat the grill to medium-high.
- Grill chicken for 6-7 minutes on each side until cooked through, reaching an internal temperature of 165°F.
- While chicken grills, dice the avocados and tomatoes.
- Let chicken rest for a few minutes, then slice and top with diced avocado and tomatoes before serving.
Notes
For deeper flavor, marinate the chicken overnight. Can substitute with thighs for a richer taste.
