Keto Crispy Reuben Roll-Ups are a delicious low-carb snack that combines the classic flavors of a Reuben sandwich in a crispy, roll-up form.

- 8 oz corned beef, sliced
- 4 oz Swiss cheese, sliced
- 1 cup sauerkraut, drained
- 4 large lettuce leaves
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Lay out the lettuce leaves on a flat surface.
- Spread a thin layer of Dijon mustard on each lettuce leaf.
- Layer the corned beef, Swiss cheese, and sauerkraut on top of the mustard.
- Roll the lettuce leaves tightly to form roll-ups.
- Brush the outside of the roll-ups with olive oil and season with salt and pepper.
- Place the roll-ups on a baking sheet and bake for 10-12 minutes until crispy.
- Remove from the oven, let cool slightly, and slice before serving.
Notes
- For extra flavor, add a sprinkle of caraway seeds before rolling.
- These roll-ups can be served with additional mustard for dipping.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
