Description

Delicious and satisfying roll-ups filled with tender beef, creamy cheese, and vibrant vegetables, all wrapped in fresh lettuce for a keto-friendly meal.

Ingredients

Scale
  • 1 lb thinly sliced beef (ribeye or sirloin)
  • 1 cup cream cheese, softened
  • 1 cup shredded provolone or mozzarella cheese
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lettuce leaves (for wrapping)

Instructions

  1. Sauté the Vegetables: In a heavy-bottomed skillet over medium heat, add the olive oil and sauté the sliced onion and bell pepper for about 5-7 minutes. Cook until they are soft and fragrant.
  2. Combine the Cheeses: In a mixing bowl, combine the softened cream cheese and shredded provolone or mozzarella cheese. Stir until well-mixed and creamy.
  3. Add the Beef: To the skillet, add the thinly sliced beef, seasoned with salt and pepper. Mix everything together, ensuring the beef becomes nicely coated with the vegetable and cheese mixture. Let it cook for another 3-4 minutes until the beef is heated through.
  4. Assemble the Roll Ups: Lay out the lettuce leaves on a clean surface. Scoop the beef and cheese mixture onto each leaf generously.
  5. Roll and Serve: Roll the lettuce leaves tightly around the cheesy beef filling. Serve warm and enjoy each delightful bite!

Notes

Make-ahead tips: Prepare the beef and cheese mixture a day before and store it in an airtight container in the fridge. Roll them up fresh when you’re ready to serve!
