Description

A delicious and healthy dish featuring cod fillets cooked in a lemon garlic butter sauce, served with roasted Brussels sprouts.


Ingredients

  • 4 cod fillets
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • 1 pound Brussels sprouts, halved
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet.
  3. Roast the Brussels sprouts in the oven for 20-25 minutes until golden brown.
  4. In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
  5. Add the cod fillets to the skillet, season with salt and pepper, and pour the lemon juice and zest over them.
  6. Cook the cod for about 4-5 minutes on each side until cooked through and flaky.
  7. Serve the cod on a plate with roasted Brussels sprouts on the side, garnished with fresh parsley.

  • For a spicier kick, add red pepper flakes to the garlic butter.
