- 4 cod fillets
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- 1 pound Brussels sprouts, halved
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet.
- Roast the Brussels sprouts in the oven for 20-25 minutes until golden brown.
- In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
- Add the cod fillets to the skillet, season with salt and pepper, and pour the lemon juice and zest over them.
- Cook the cod for about 4-5 minutes on each side until cooked through and flaky.
- Serve the cod on a plate with roasted Brussels sprouts on the side, garnished with fresh parsley.
Notes
- For a spicier kick, add red pepper flakes to the garlic butter.
- Make sure not to overcook the cod to keep it tender.
- This dish pairs well with a side of quinoa or rice.
